Traditional breeds of lamb are used such as our own flock of pure Ryeland and Ryeland Cross. We also use local Cartmel Valley lamb and pure Herdwick lamb and shearlings from Millbeck Farm in Great Langdale. All of which produce their own interesting flavours.
